Efter att ha publicerat Orvalinlägget så har jag lekt Hercule Poirot. Nu har det gett resultat!
Först och främst får jag skämmas lite. Jag har nämligen missat att Jean Marie Rock har lämnat över bryggmästarrollen till Anne-Francoise Pypaert och det ber jag om ursäkt för. Jag har också mejlat en ursäkt till Anne-Francoise för att jag inte kände till att hon varit på bryggeriet i 20 år!
Hur som helst mejlade jag henne och frågade rätt ut om de slutat tillsätta Brettanomyces och varför i sådana fall. Detta är hennes svar:
Dear Jens,
We never stop to add the Brettanomyces in Orval. But last year we have constated that our yeast strains has difficulties (due to a mutation) to grow in Orval. Maybe it is the reason why you don’t find the Brett.
Fortunately we conserve our yeast strains correctly and we start in production with the original strain of Brett. Since last year the problem is over.
The most of consumers didn’t taste the problem with Brett, because they drink young Orval and in young beer the presence of Brett is low.
For your information I worked in Orval since more than 20 years and I try to do my best to keep the caractere of Orval.
